Take a break from the Easter Eggs with these delic

Take a break from the Easter Eggs with these delicious Dark Chocolate & Sea Salt Oatmeal Cookies made by @thelittlegreenspoon. These cookies are the perfect treat with your mid-morning coffee or as a treat after dinner! You can even use your leftover Easter chocolate for this (if you have some!) Let us know if you give them a go 😍

Serves 12|Takes 20 minutes

INGREDIENTS:
200g of Flahavan’s gluten free oats
80g room temperature coconut oil
75g of coconut sugar
80ml of maple syrup
85g of nut butter
1 teaspoon of vanilla essence
30g of cacao powder
50g dark chocolate
Sea salt

METHOD:
Preheat the oven to 180°C.
Make sure your coconut oil is at room temperature before starting. It should be ‘scoopable’ with a spoon but still white, not runny and clear.
Using an electric whisk, beat together the coconut oil and coconut sugar.
Add in the nut butter, maple syrup and vanilla and mix until smooth.
Add 100g of the oats to your food processor and blend on high until fine to make oat flour.
In a large bowl, mix together the oat flour, 100g of whole oats, cacao powder and a good pinch of sea salt.
Then pour the dry ingredients into the wet and mix until combined.
Chop the chocolate into chunks and mix it in.
Line a baking sheet with parchment paper. Scoop out the dough and use your hands to roll it into balls. Place them on the baking sheet and press them down into cookie shapes, tidying up the sides if needed.
Cook for about 9-11 minutes until the edges are starting to brown but they’re still a little soft in the middle.
Leave them to set on the tray on a wire rack for about 10 minutes before removing them from the tray.

Perfect for any type of celebration happening this weekend or a great way to use up left-over Easter Eggs (if there's such a thing!) for a healthier snack on the go! Serves 8-10 |Takes 10 mins + 1 hour chilling time

INGREDIENTS:
80g maple syrup or honey
80g butter, plant based if desired or necessary
130g smooth Nutshed Smooth Peanut Butter
20g cocoa powder or raw cacao powder
130g Flahavans Gluten Free Pure Oats
20g desiccated coconut
9 – 10 heaped tsp of yoghurt of choice
Berries for serving

METHOD:
- Whisk together the maple syrup or honey, melted butter, peanut butter, and cocoa powder in a large bowl.
- Add the oats and coconut and mix well to combine.
- Divide the mixture into 10 even balls. Flatten and shape into cookies in a large plate or tray that will fit in your fridge. Place into the fridge to firm up for at least an hour.
- Before serving, fill the center of each cookie with your yoghurt of choice and top with berries.

Ian joined Flahavan’s in February 2023 as our International Sales Manager and has been championing our oats from the USA to Korea and everywhere in between! His go-to breakfast is our tasty and super convenient Protein Oat Pots because they are the perfect fuel for the gym and convenient for long drives 💪🚗

When Ian’s not managing markets, you’ll find him coaching youth sports or volunteering with his local animal welfare charity. His “As lovely as” moment is his First sip of coffee by the window in the morning — the calm before the storm ☕ #Flahavansirishoats #Creamofthecrop
